Blue Monday Beetroot Cake {with Chocolate}

Blue Monday: officially the most depressing day of the year. The third Monday in January is the day the effects of the dreaded January blues are most likely to be felt. The holiday cheer seems a distant memory, Christmas trees lay decaying in the street and there’s still two weeks to go until payday. I understand the feeling that everything kind of sucks… I think I have just the thing to help you knock the socks off those blues.

Chocolate Beetroot Cake

Just what the doctor ordered. This cake is decadent and moist, tasting rather sinful. It’s little secret is that it’s chock full of beetroot and bananas and lots of other good things. It’s sure to lighten your spirits and lift your mood. I’m not just saying that – here’s how this cake will literally make you feel goddamn good!

  • Cocoa – full of ‘feel good’ chemicals including serotonin and dopamine. These guys lift your mood and elevate your spirits.
  • Beetroot – is high in nitrates and proven to give your brain and body an energy boost. I think we could all do with some more beets!
  • Banana – contain vitamin B6 and the amino acid tryptophan along with a whole host of other great things. The B6 helps convert the tryptophan into the wonderful mood boosting serotonin.
  • Coconut – the fats in coconut are used by the body to increase energy and aid in the production of serotonin.

There’s no better time than now to sprint into the kitchen and whip up a batch of this delicious cake. The smell wafting from the oven will be enough to lighten your mood.
