Lazy Breakfast: Overnight Oats

I go through life in a series of phases. Sometimes in my life I am a morning person. At these delightful times I leap out of bed at the crack of dawn, excited and ready to seize the day. Other times in my life, I struggle to rise from my slumber. The duvet seems too inviting and the morning seems too chilly to fathom unwrapping myself. It is days like these when I struggle on mornings. Of course a hot cup of smooth coffee helps but I need sustenance to keep me going. This is when I turn to my current favourite breakfast; overnight oats.

So creamy, so delicious, so foolproof you could make it with your eyes closed. This is totally breakfast for lazy people who just can’t fathom anything so early in the morning.

To make my creamy dreamy overnight oats you will need;

  • Jumbo oats
  • Frozen berries
  • Coconut milk (chi or koko are good brands)

To make life even easier you can use a jar with a lid as your vessel of choice for this delightful breakfast and then you can throw this into your bag to eat on the run if you are that way inclined (I am).

Throw as many oats and berries as your heart desires into your jar or favourite bowl. Cover generously with your coconut milk, stir well. Leave in the fridge overnight.

Just like magic, when you drag your sleepy butt out of bed, your oats will have transformed into a creamy treat to get you going in the morning. Mmmm.
