Vegan MoFo 2014: Cheap Clean Eats – Dhal

DSC_0690 DSC_0693Lentil dhal. A staple nourishing food source of students, vegans and paupers alike. As I fall into two of those three categories this is a meal that is seen regularly at my table. The easiest and tastiest meal to make, this dish requires little money and even less effort to make. It freezes well and you can whip up a big delicious pot in no time. As you may be aware, I am not one to measure my ingredients but here is what I put into my tasty dish this evening;

Ingredients;

  • Oil
  • Garlic
  • Turmeric
  • Onion
  • Ginger
  • Curry spices
  • Lentils
  • Stock cube
  • Cardamon
  • Tomato puree

Directions;

Heat the oil in a saucepan. Finely chop the onion, garlic, ginger and turmeric. Gently fry until soft. Add the curry spices and fry for another minute or two. Add the lentils, stock and cardamon and simmer until the lentils are cooked. Stir in the tomato purée until the correct consistency is reached. Bon apetit!
