Vegan MoFo 2014: Cheap Clean Eats

DSC_0726 DSC_0734So you guys remember me saying I needed to eat more seaweed in my diet? Well yesterday I went and bought some Clearspring Organic toasted nori sheets. I got a rumbling in my tummy around lunchtime today and I needed to eat – quickly. Like immediately. I was getting hangry (hungry/angry).

I rummaged around my sorry looking fridge and realised I had a stirfry rice medley leftovers from yesterday. I grabbed that, reached for my nori sheets. Then I made a beautiful marriage of leftovers and seaweed. I sloshed on some soy sauce and hot sauce. Rolled it up and BAM! Lunch was served. This was not pretty dainty food. Don’t serve this if you are going on a date or trying to impress somebody. It gets real ugly and messy when you are eating these nori rolls. Don’t say I didn’t warn you 😛

Apologies for no post yesterday, I had a crazy busy day. I didn’t even eat dinner until after midnight last night! Mental! I am planning on posting twice today to make up for it, as soon as my dinner is done cooking.

What do you guys put in your nori rolls? I need ideas! Do you make as much mess eating as I do?!

  1. Oh man I have a whole pack of nori sheets in my cupboard and so far I’ve only used one. I need to get better at that.

    I crumbled mine up in to a mixture of pulverised chickpeas, minced onions, vegan mayo and various other ingredients that I can’t remember off the top of my head, to create a vegan ‘tuna’ salad. The nori gave it a nice ‘fishy’ flavour.
