Vegan MoFo 2014: Purple Carrot Soup

I have been a little bit obsessed with soup recently. It is so warming and comforting. A hug in a mug and oh so delicious. Here is some purple carrot and ginger soup that I made one morning last week. Yes, I was an absolute swine. I was the person who picked all of the purple carrots out from the ‘rainbow carrots.’ Sorry not sorry, they are so the best :p Purple veggies are so rad.

I didn’t follow a recipe, I just winged it and it worked.


  • Purple carrots
  • 1/2 Onion
  • Garlic
  • Ginger
  • Veg stock
  • Oil
  • Salt and pepper

Fry the diced onion, garlic and ginger in oil until soft. Add the carrots, stock and season well. Bring to the boil then simmer for about half an hour. Blend until smooth. Enjoy. This would be so good with some soy / coconut cream swirled on top.

Sorry for this short but sweet post, I’m feeling super ill tonight. I am devouring a hugeeee bowl of spicy pasta and watching trash tv. Ok, I’m watching Jonan From Tonga. Please don’t judge my poor taste in television shows. I literally have the worst taste. I don’t often watch TV but when I do the trashier the better 😉

    • Hehe! I believe that carrots were originally purple but we chose to mass cultivate the orange ones! My finger is healing very nicely thank you for remembering 😀 That is a mistake that I will not be making twice! Hope you’ve had a brilliant day lovely. Olivia ♥
