Vegan MoFo 2014: Peanut Butter Cups

Peanut butter cups. Possibly the best invention ever in the whole history of the universe. I’ve been playing in the kitchen a lot recently and last night I came up with my version of the peanut butter cup. Move over Hershey’s with your dairy and corn syrup laden ‘treats’. This is peanut butter cups my way. I guess they are more like little almost raw pies as opposed to chocolates. Don’t they just look divine?

DSC_0690 DSC_0693So these tasty little morsels consist of three components; the ‘crust’, the peanut butter layer and the chocolate layer. To make these little cutie pies you will need to soak 2/3 of your dates for about an hour or two before so the filling will be silky smooth.

For the crust you will need;

  • 1/2 cup nuts or seeds
  • handful or two of raisins
  • about 100g dates

For the peanut butter layer;

  • about 100g dates (dry weight) soaked
  • 1 tbsp salted peanut butter

For the chocolate layer;

  • about 100g dates (dry weight) soaked
  • 1 tbsp cacao powder

To make the pies blend the three layers separately. Smooth the crust layer evenly over the pie tins and pop in the freezer for about half an hour to firm up. Once firm, spread with a good helping of the peanut butter layer and freeze again. Finally top with the chocolate layer and freeze until set. Devour as you wish – frozen, chilled or room temp (it will be quite soft at room temp but still delicious!). I promise this dessert tastes as delicious and decadent as it looks, without any added sugar, chemicals or nasties! You must give this one a go – it is so good 😀
