Vegan MoFo 2014: Lazy Lunch

So, I am not going to lie to you guys.. I have been a naughty little vegan tonight. So easily led astray by new friends, vegan cider and questionable coffee flavoured shots that I might most definitely will regret in the morning. My writing is strangely coherent however so I shall continue with what I can only say will most likely turn out to be a very sorry excuse for a Vegan MoFo post. Though it is half past midnight, here is my post for day three. I had a delicious lazy lunch today. It consisted of brown basmati rice, my smoky beans, hummus, green onion and cilantro. Yummm.

Here is a fun fact for you. Though I have spelt the word ‘basmati’ correctly.. I just checked.. Google is highlighting it as a spelling mistake and suggesting that maybe I intended to write ‘astigmatism’ instead. I certainly did not and those words are very different. I think I found this a little more amusing than it in fact is. Oh. I think it is time for me to hit the hay.

I am currently sipping on a Choco Yogi Tea and guess what guys..?

We are tears born in the eyes of god.

This is certainly one of the stranger yogi tea fortunes that I have had but I’ll take it..

  1. This is by no means a sorry excuse for a Vegan MoFo post – quite the opposite! And I love that you’ve been led astray by some rather pesky vegans, especially when there’s vegan alcohol involved. Your lazy lunch looks positively glorious. I’m going to keep this fabulous dish in mind over the coming month, it’s just too good to bypass. 🙂
