I had so much fun reading everybody’s Vegan MoFo posts last year that I decided to participate myself this year. One month, 30 posts dedicated to delicious vegan food. Oh my. I am way too excited about this for my own good. In case you don’t know Vegan MoFo stands for Vegan
Mother Fuckers Month Of Food. I decided to kick off the MoFo with some good, hearty, delicious one pot goodness.
Smoky bean chilli. I kind of made the recipe up myself as I couldn’t find a good one on the internet, but I knew what flavours I wanted in it. If you would like to make Olivia’s Awesomesauce Chilli, you will need the following ingredients;
- 2 onions, diced
- 3 cloves garlic, chopped
- 2 sticks celery chopped
- 2 carrots diced
- 2 tsp smoked paprika
- 2 tsp smoked chipotle chilli flakes
- 1 tsp chilli powder
- 1 tin kidney beans
- 2 tins black beans
- 1 tin haricot beans
- 1 jar passata
I shall walk you through the directions with pictures;
Dice the onion, carrot, celery and garlic.
Heat a little oil in your favourite pot. Gently sautee the veggies for about 10 minutes, stirring frequently.
Add the spices, stir. Enjoy the beautiful smells and fry for approximately 2 minutes.
When your chilli looks all thick and delicious it is ready. Eat in any which way your heart desires.Tonight my heart desired a post night run burrito. I used a wholewheat wrap, the smoky beans, hummus, spinach, spring onion and cilantro. Moreish is an understatement.
Expect to see my smoky beans rehashed and even more delicious over the next couple of days. I am currently in the habit of making one huge pot of something delicious and eating it in various formats for a few days. Expect to see this baked into ‘shepherds pie’, with rice, maybe even in pastry if I can be bothered 😉 It will most certainly be shared with friends and hungry housemates. I absolutely love to share food with other people, what can I say..? I’m a feeder and I am not ashamed to admit it.
Well day one has been fun, I am excited for the rest of this month.
