As a Northerner, there is nothing I enjoy more than some good old chips. However I do them my way. My way or the high way buddy 😉 I have recently been eating a lot of high carb cooked food towards the latter part of my day and having gotten bored with corn pasta recently I have rediscovered my love of potatoes. I have also been inspired by the beautiful and blooming Loni Jane. This pose is my homage to her love of chips! For this dinner I made Loni’s amazing oil free chips. To make these simply scrub your organic potatoes, slice them as thick or thin as you want. Throw them into a pot of boiling water to parboil for a couple of minutes. Then drain and place on a baking sheet in the oven. Ensure there is a tray of water in the oven below the chips. This stops them from drying out and makes them all yummy without the need for oil.
To go with my chips I obvs opted for Mr Organic ketchup. The best ketchup ever ♥
I also made a huge salad to go with my chips.
This meal was satisfying and delicious whilst remaining high carb and low fat.
Don’t ever beat yourself up about eating cooked food. It is warm and comforting in this cold drizzly weather we are having here in Blighty. A loving hug for your belly 🙂 Just make sure to always eat the foods that are going to love you back – organic potatoes, organic brown rice, corn pasta etc. Lots of delicious veggies! Whatever makes you feel good. Whatever makes you happy 😀
