This is what I made for dinner one night last week – apologies for the poor quality photos this was due to bad lighting and a growling stomach!
So I took my new fave kitchen gadget – the spiralizer and I spiralized one massive cucumber and a few carrots. I tossed these together with some peppery rocket. I had been watching Kat Green’s videos on YouTube the night before and she mentioned something that sounded amazing to me… Mango, basil and red bell pepper salad dressing. I just had to make it. Oh boy! It was like there was a party in my mouth and everybody was invited 😀
I joke not – this salad dressing literally blew my mind!
You must try this – I used;
- 2 large ripe mangos
- 1 massive bunch of basil
- 1 large red bell pepper
Just blend until smooth and smother your salad in it. You will love me forever if you try this. I promise!
Tonight I just made some zucchini noodles and a delicious raw pesto which I will share with you another time. It is too dark for photos and too yummy to wait any longer for!
